The ingredients for the well-known Korean street food dish tteokbokki include rice cakes, a hot sauce, and assorted vegetables. An easy recipe for tteokbokki is provided below:
Ingredients:
500g of rice cakes in a cylinder shape (tteok)
3 glasses of water
Anchovies, 5–6, dried (or 1 tablespoon of fish sauce)
4-5 shiitake mushrooms, dried
2 green onions, chopped into 2-inch chunks, along with 1/2 onion, sliced, and 1/2 carrot, sliced
sliced half a cup of Korean fish cakes (optional)
Vegetable oil, 1 tablespoon
To make the sauce:
Korean chili paste, 3 teaspoons (gochujang)
Soy sauce, 1 tablespoon
1 teaspoon sugar
1 tablespoon of honey or corn syrup (optional)
1 tablespoon of garlic mince
Sesame oil, 1 teaspoon
Instructions:
For around 30 minutes, soak the rice cakes in cold water to soften them.
Water, dried anchovies (or fish sauce), and dried shiitake mushrooms should all be combined in a pot. Making broth requires 15 minutes of boiling. Put aside after straining.
Combine all the sauce ingredients thoroughly in another bowl.
Heat the vegetable oil over medium-high heat in a wok or big pan. Stir-fry the onion and carrot slices for two to three minutes.
Stir-fry for a further minute before adding the green onion and fish cake (if using).
When the rice cakes are completely covered in sauce, add the sauce and rice cakes to the pan.
Bring the broth to a boil in the pan after adding it.
Simmer for around 10 minutes, or until the sauce has thickened and the rice cakes are completely cooked, on low heat.
Serving hot, please.
Note: By adding more or less chili paste, you can change how hot the dish is. To make it more interesting, you can also add extras like cooked eggs, cheese, or ramen noodles.
