Ingredients:


Olive oil, two tablespoons

diced one medium onion

2 sliced and peeled carrots

2 cut celery stalks and 2 chopped garlic cloves

4 cups of chicken stock

two cups of cooked chicken, diced or shredded

Bay leaf, one

one tablespoon of dried thyme

pepper and salt as desired

two cups of egg noodles

chopped fresh parsley (for decoration)


Instructions:


Olive oil should be heated in a sizable pot over medium heat. Add the chopped celery, carrots, and onion. Cook for about 5 minutes, stirring periodically, until the vegetables are softened.


Add the minced garlic to the pot and cook for one more minute when aromatic.


Add the dried thyme and bay leaf after adding the chicken broth. To taste, add salt and pepper to the food. The mixture should boil.

Add the cooked chicken to the pot after lowering the heat. To allow the flavors to mingle, simmer for 10 to 15 minutes.


Cook the egg noodles in a separate pot in accordance with the directions on the package while the soup is boiling. Once the noodles are done, drain them.


Remove the bay leaf after the soup has simmered for a while. If necessary, taste and adjust the seasonings.
